Coffee Bean Varieties
Coffee beans are the raw material for black coffee. There are hundreds of varieties, differing by type, origin, and grade, with prices varying accordingly. Currently in Beijing, we are more familiar with varieties such as Blue Mountain, Italian, Mandheling, Brazilian, and Charcoal, which can be purchased in many supermarkets, mostly as roasted beans.
Due to different origins, coffee beans have different characteristics. Some are darker in color with higher roasting degrees and stronger flavors; others have lighter colors and milder tastes. Experts selecting coffee often grab a handful of beans to check if each bean's color is consistent, and if the size and shape are similar, to avoid buying inferior products disguised as mixed beans. Additionally, if roasted beans appear oily, it indicates they have deteriorated, not only reducing aroma and richness but also producing astringent and sour tastes.
The Art of Brewing Black Coffee
People who love black coffee mostly brew it at home. On a small table, they arrange several essential items for preparation, a process reminiscent of Chinese tea ceremonies. Those who appreciate ambiance will buy grinders to slowly grind beans at home, enjoying the attentive process.
Currently, better quality grinders are mostly produced in Japan and Taiwan, available in both manual and electric versions. Manual grinders often have an antique appearance and cost one to two hundred yuan. However, there are more expensive options, such as those that can adjust coffee powder coarseness through springs or adopt the currently popular double-wheel design, ranging from 300 to over 600 yuan.
There are three methods for making black coffee, resulting in three different types of coffee makers: traditional drip, siphon, and electric. Traditional drip is the most primitive method with the simplest tools. The coffee maker consists of a funnel, a filter paper, and a container below, but it requires high manual skill. When handled properly, it can brew exceptionally pure, premium coffee. These makers are very inexpensive, costing only a dozen yuan or so.
Drip coffee makers are suitable for coffee enthusiasts with stable hands and sensitive palates. When selecting drip coffee equipment, note whether it has three holes or one - this is very important. Three-hole models drip faster with shorter extraction time, producing milder coffee, while one-hole models are the opposite.
Although traditional drip is the simplest method, it produces the most authentic coffee flavor. During the brewing process, precise control of water temperature, flow rate, and trajectory is essential. Even water flow and circular trajectories allow the coffee flavor to develop naturally, so the choice of kettle and hand control when pouring water are very important.
When water contacts the coffee, it should maintain a circular motion, moving from outside to inside and inside to outside repeatedly, ensuring full contact between coffee and water. Meanwhile, water temperature of 92°C allows the coffee's aroma, richness, sweetness, acidity, and bitterness to be balanced and intense. Too high water temperature will scorch the coffee, making the taste sour and astringent; too low temperature makes it difficult to extract the coffee's rich aroma.
The Art of Tasting Black Coffee
When tasting black coffee, one should first appreciate its aroma, then observe its color, and finally sip it slowly. Don't rush to swallow the coffee. First, hold it in your mouth, experiencing the sensations at different positions, then slowly swallow.
Only through appreciation involving smell, sight, and taste can one truly grasp the essence of a cup of coffee and enjoy the balance of the four original flavors in black coffee: aroma, sweetness, acidity, and bitterness.
