Understanding Decaf Coffee
When it comes to decaf, people typically think of two things: first, it's very gentle to drink, with caffeine content below 0.1% of the green coffee bean's dry weight; second, most common decaf coffee beans tend to have lackluster flavors, losing the wonderful aroma and unique characteristics like fruitiness that coffee beans naturally possess.

Let's first introduce two common processing methods for decaf green coffee beans: the water processing method and the supercritical carbon dioxide processing method.

Even the color changes, so naturally the flavors are worlds apart. Because of this, decaf coffee processing facilities don't care much about what processing method this bean had before its transformation, or what its original flavor was, because after decaf processing, everything that should be gone is gone. Therefore, the decaf green coffee beans we typically encounter don't have detailed and clear information like regular specialty coffee beans, such as whether the processing method is natural or washed, which specific region of which area, which estate, what altitude, etc...
