In reality, multiple processing methods are typically used to separate the fruit pulp from coffee seeds, with a common approach being backyard-style wet processing. Clever farmers place freshly picked coffee cherries into rudimentary pulping machines assembled from scrap metal, wood, and bicycle parts. The de-pulped sticky wet beans are then placed in plastic woven bags to ferment overnight. The next morning, the fermented soft pulp and mucilage are manually washed away. The silver-skin-covered coffee is pre-dried on thin boards in the front yard before being sent to intermediate traders' warehouses for silver skin removal and further drying. Finally, the coffee is transported by truck to Medan port, completing the third and final drying stage.

After de-pulping, Mandheling's mucilage is allowed to dry while attached to the beans, similar to Brazil's semi-washed processing. Later, machines remove the dried mucilage and silver skin. This is followed by the same two-stage drying: first in intermediate traders' warehouses, then in exporters' warehouses at Medan port. This processing occasionally produces excellent coffee but is extremely inconsistent. Only the relentless sorting at exporters' warehouses in Medan port can ensure Mandheling's deep texture and unique, understated richness emerge from other flavor interferences.

Some Sumatra coffee enthusiasts appreciate certain aged flavors. For example, Earthy Sumatra, popular among coffee lovers, obtains its fresh earthy character by drying directly on soil. Musty Sumatra acquires an old shoe-like mustiness through humid small rooms, similarly attracting its devotees.
