Introduction:
Ethiopia coffee mainly has eight major producing regions: Ekempti, Limu, Illubabor, Djimma, Harrar, Teppi/Bebeka, Sidamo, and Yirgacheffe. Ethiopian coffee is highly regarded in Taiwan, especially the three relatively famous regions of Harrar, Sidamo, and Yirgacheffe, which Taiwanese people are particularly interested in and passionate about. The Sidama province is located in southern Ethiopia, with Arsii province to the north, extending east to connect with Bale province, and Gamu Gofa province administrative region to the west.
The Sidama province administrative jurisdiction includes two extremely famous producing regions: Yirgacheffe and Kochere. The industry is mainly agriculture-based, with coffee growing areas located around the Great Rift Valley. Wanago is a small area in Gedeo, southern Ethiopia. Gedeo is located about 5 kilometers south of Yirgacheffe town. Within Gedeo's jurisdiction, Yirgacheffe and Kochere are the most well-known areas.
Oumer-Abedu Processing Station belongs to the Wanago cooperative, which is composed of more than 700 local small coffee farmers working together. Due to the numerous neighboring cooperatives, coffee batches from this small producing region have always shown surprisingly excellent performance. Carefully selected fully ripe coffee cherries, with careful removal of defective beans during the sun-drying process on raised beds, enhance flavor cleanliness and consistency, ensuring each production batch is of the best quality.
These small farmers' coffee cultivation areas average about 1 hectare, with growing altitudes of approximately 1900-2100 meters. The coffee varieties are mainly local indigenous varieties (Heirloom). This region has an annual rainfall of 1900mm, with 3-4 months being the dry season and 8-9 months being the rainy season. After the small coffee farmers sort and grade red cherry-colored coffee fruits, they are produced by the nearby Oumer-Abedu Processing Station and placed directly on raised beds for natural sun-drying. During the first few days of drying, they are turned every 2-3 hours to prevent over-fermentation.
After four to six weeks of sun-drying, when the humidity reaches 12% or below, the beans are cupping-graded and auctioned in quantities by the Ethiopia Commodity Exchange (ECX). Typically, sun-dried processed beans are stored as parchment beans until the dehulling work is done just before export.
