Delicious iced coffee, while its aroma may not be as pronounced and uplifting as hot coffee, reveals a cascade of wonderful flavors, aromas, and textures the moment it touches your palate, enriching your mouth and satisfying your soul. However, this isn't just iced coffee with ice cubes added, but rather cold brew coffee slowly extracted with cold or ice water, overturning conventional coffee perceptions and allowing you to enjoy the mellow richness like fine wine along with a refreshing cool sensation.
As coffee has become a daily necessity for many people, beyond the differences in coffee bean growing regions and varieties, the distinction between light and dark roasts, and the various methods of brewing hot coffee, there's another way to enjoy coffee: cold brew. During scorching summer days, the fermented aroma and cooling sensation of iced coffee are particularly captivating.
Cold brew coffee can generally be divided into three preparation methods: water drip, ice drip, and cold brew. These three methods produce different flavors and textures due to different extraction conditions, but all belong to the category of cold brew coffee. The principle of cold brew coffee is the same as cold-brewed tea – using low temperatures and long steeping times to slowly extract the flavors from the coffee.

The equipment for ice drip coffee was originally manufactured in the Netherlands, thus it's also known as Dutch Coffee, or alternatively as Water Drip Coffee or Cold Brew Coffee. Due to its smooth mouthfeel and long-lasting aftertaste, it's very popular among coffee enthusiasts.
Extraction Principle
Unlike other coffees extracted with hot water, the characteristic of ice drip coffee is the long extraction time of 3-12 hours using cold water. The extracted coffee isn't consumed directly but instead placed in an airtight container and refrigerated for 2-5 days to continue maturing, allowing for an even smoother flavor experience. Well-extracted ice drip coffee can offer a better texture and aroma than red wine. You can add ice cubes or cold water according to personal preference, or it's also excellent with sugar and milk. Generally, this extraction method of adding coffee grounds to cold water for long steeping is favored by many people.
Coffee is extracted using the pressure of water droplets falling from above. Water is added to the upper chamber, coffee grounds are scooped onto filter paper, and the slow drip method is employed. It's important to use dark-roasted, finely ground coffee. The proper extraction speed is one drop of coffee every 1.5 seconds, which can be adjusted using the flow rate control switch.
Ice drip coffee extracted with cold water is more popular in summer. Compared to coffee brewed with hot water, it tastes less acidic and astringent, and even after long storage, the flavor doesn't change significantly. Additionally, caffeine only dissolves in water above 75°C, so ice drip coffee extracted with cold water contains almost no caffeine, has less bitterness or astringency, and is rich with notes of dark chocolate and smoky aromas.
Ice Drip Coffee Extraction Method
Prepare Equipment (16 servings)
Ice drip coffee pot, measuring spoon (or electronic scale), 50g coffee grounds, 500ml water.
Note: 30ml of extracted ice drip coffee equals one serving. Adjust concentration by adding ice cubes and water according to personal preference before drinking.
