● Is Coffee Sour?
Coffee beans are taken from coffee fruits, so they contain acidic substances.
There are two types of coffee sourness: one is the bright and lively "fragrant acidity," and the other is the sour but unfragrant "dead acidity."
Fragrant acidity tastes like the fresh scents of lemon, apple, and citrus, refreshing and pleasant like juice; dead acidity is as difficult to swallow as white vinegar, absolutely unappealing.
All raw coffee beans contain both fragrant and dead acidic components. How to maximize fragrant acidity and minimize dead acidity depends on the roaster's skill; on the other hand, the deeper the roast, the higher the degree of caramelization, the more acidic substances are destroyed, and the less likely there is to be sourness.
● Is Specialty Coffee Bitter?
Many friends say that coffee is very bitter and hard to drink. In fact, it's because most coffee shops "use bitterness to cover flaws," roasting deeply to mask undesirable off-flavors.
The bitterness of coffee mainly depends on:
The nature of raw beans – flavors produced by growing regions and methods
The quality of raw beans – whether there are defective or flawed beans
Roasting – the depth of roast and roasting techniques
Poor quality coffee beans will present undesirable flavors, even off-flavors. The so-called "using bitterness to cover flaws" is actually an attempt to use the bittersweet taste of dark roast to cover poor flavors, but often due to poor roasting, it creates a burnt, bitter, and unpleasant taste.
