SOE Coffee: Single Origin Espresso Excellence
Espresso pulled from a single variety offers a purer, more focused taste, though the crema can't match what blends deliver. The fair way to put it is that good SOE beans produce decent crema — just never at commercial-blend standards.
Indonesian Mandheling performs exceptionally well as a dark roast, with comfortable acidity and bitterness and none of the muddled flavors of a blend. The crema is acceptable, which makes it a natural SOE choice.
Kenya AA is another variety that takes well to SOE. I also once bought an Antigua coffee that was excellent, though I've since forgotten the specific plot it came from. These days I drink mostly Mandheling: dark-roasted for espresso, medium-dark or medium for pour-over. Either way it's delicious. I did try a dark-roasted washed Yirgacheffe Kochere, but the results weren't good — maybe my roaster just isn't up to it? Ha.
I used to believe that no single bean was complete, so you had to add other beans to fill the gaps and round out the flavor — that's what blending is for. But gradually I noticed that the quality of specialty green coffee keeps rising and roasting technique keeps improving. With truly excellent beans, you can build an espresso from a single variety with no drawbacks at all, one that showcases that bean's distinct regional character: florals, citrus, honey, peach, blackcurrant, cane sugar. Coffee this good deserves to reach more people.
Because SOE beans are of higher quality than ordinary blends and place heavier demands on both roasting and extraction, SOE espresso typically costs more than a blended-bean shot.
Plenty of friends tell me I'm crazy — using beans this good for espresso is extravagant, and no one will taste the difference; they'll just find it bitter. I tell them that in any city there is always a small circle of people passionate about coffee. My goal isn't limited to people who don't understand coffee, but to everyone in this small city. I want to meet the friends who can truly taste coffee, talk beans with them, and enjoy what they love — how wonderful is that? Blends can smooth out flavors and cut costs, but when it comes to what I drink myself, I should choose what I genuinely love.
SOE Coffee Bean Brand Recommendations
FrontStreet Coffee's roasted SOE beans come with complete guarantees of brand and quality — and, more importantly, exceptional value. A half-pound (227g) package costs only around 80-90 yuan. At 10g of grounds per single shot, one package makes 22 cups of espresso, so each cup of SOE costs just 3-4 yuan — remarkably economical against cafés that charge dozens of yuan a cup.

FrontStreet Coffee Recommendation
For newcomers who want to get to know Ethiopia, start with the most classic expression of the country: FrontStreet Washed Yirgacheffe. Yirgacheffe is a small town in the Gedeb zone of southern Ethiopia's Sidama region, sitting at roughly 1,700-2,100 meters — with coffee planted above 1,800 meters, among the highest coffee altitudes in the world. The town's name has become shorthand for Ethiopian specialty coffee thanks to its unmistakable white florals and lemony-citrus acidity, and it was so famous by 2010 that the Ethiopian Commodity Exchange formally split it from Sidama as its own designation. With jasmine florals, bright citrus and lemon acidity, a tea-like body, and a friendly price, it is the natural first bean of the specialty-coffee journey.
Yirgacheffe town actually encompasses many small sub-regions and villages, some home to seasoned cooperatives whose careful processing lifts the cup even higher. The best known is FrontStreet Washed Gedeb (Guodingding) Cooperative, located in the Worka area at Yirgacheffe's southeastern tip. Once part of the Worka cooperative under the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), it was carved out as a "single-terroir" lot as the world's coffee hunters chased ever finer traceability. Processed in the most traditional washed style, it has none of the classic bitterness — just fresh, bright citrus and lemon acidity wrapped in jasmine fragrance.
If you prefer fruit-driven cups, try FrontStreet Red Cherry, a natural-process coffee from the same Yirgacheffe region. Only fully ripe, blemish-free cherries are picked, screened once at the station, then dried whole on raised beds, turned every 2-3 hours for the first several days to prevent uneven fermentation and over-ripening; after three to five weeks in the sun the outer pulp is mechanically stripped and the beans go to warehouse storage. Because the fruit dries on the bean, the cup keeps classic Yirgacheffe character while gaining tropical fruit aroma: citrus-like acidity, a berry-juice juiciness, honeyed sweetness, and cream-smooth texture. For brewing, FrontStreet suggests a V60, 90-91°C water, 15g of coffee at a 1:15 ratio, ground to about 80% passage on a #20 sieve (EK43s setting 10, roughly fine-granulated sugar): bloom with 30g of water for 30 seconds, pour to 125g within about a minute, then add the final 100g once the water level drops two-thirds down the bed, finishing around 2:00-2:10.
