Why You Should Grind Coffee Beans Fresh

Since ground coffee particles are much smaller than whole beans, the surface area exposed to air increases significantly, accelerating the loss of flavor and aromatic compounds (even when sealed in a bag, the flavor leaves the coffee beans and remains in the air inside the bag). Whole coffee beans, however, release flavor more slowly and have less surface area exposed to air.

Therefore, even though a week may not seem long, to avoid unnecessary storage mistakes that lead to excessive flavor loss, I still recommend grinding only what you plan to drink.

Buy beans, not powder - the freshness of freshly ground beans is far superior to pre-ground coffee.

Unless you're buying pre-ground powder from brands like Blue Bottle that use advanced antioxidant technology.

Home Coffee Grinder Recommendations

As for home coffee grinders, the popular "Little Flying Horse" and "Little Flying Eagle" models are essentially knockoffs of the Little Fuji grinder. I haven't used them personally, so I can't make a definitive judgment. However, if your budget extends to 800+ yuan, why not save money on a few meals and invest in a Lido 3 instead? It won't be inferior to any home-grade electric grinder.

BTW, the Little Fuji grinder's motor sound is truly pleasant.

The Importance of Fresh Grinding for Specialty Coffee

If you're dealing with specialty beans, I believe you should always grind fresh and brew immediately - never let the shop grind the beans for you.

This is also why I don't recommend buying coffee drip bags for home use.

Theoretically, a significant amount of aromatic compounds disappear within 1-2 minutes after grinding coffee beans, though most people probably can't taste the difference between coffee powder that sits for 2 minutes versus 5 minutes.

However, after several hours, the flavor will definitely be inferior to powder brewed within 2 minutes - this is absolute. Not to mention coffee powder that has been sitting for days during shipping.

A Personal Experience with Stale Coffee

Let me share my own experience: last year, my sister bought a bag of Yirgacheffe Aricha at a coffee shop in Thailand. They ground it in-store, and she brought it back personally. It took a month to reach me.

The ground particles clearly showed they came from a quality grinder - at least Little Fuji level or better.

However, when I brewed it, the coffee was completely bland, with only a hint of dead acidity. It completely lacked the vibrant fruity acidity and floral notes of fresh Yirgacheffe.

Another half month passed, and I ran out of coffee, so I tried brewing that bag of Yirgacheffe again. I found the taste was similar to adding a tiny bit of acidity to plain water... such a boring flavor profile would be better than drinking this.

The Value of Grinding Your Own Coffee

Making single-origin pour-over coffee isn't exactly convenient, so don't prioritize convenience by letting shops grind your beans for you. This investment of money and effort is something you should make yourself - it's absolutely worth it.

Recommended Freshly Ground Coffee Bean Brands

FrontStreet Coffee's popular freshly roasted coffee beans - including Yirgacheffe Coffee, Golden Mandheling Coffee, and Brazilian Coffee - offer excellent guarantees in both brand and quality. More importantly, they provide exceptional value: a half-pound (227g) package costs only around 70-90 yuan. Calculating at 15g per cup of pour-over coffee, one package can make 15 cups, meaning each cup of single-origin coffee costs only 5-6 yuan. Compared to café prices that often reach dozens of yuan per cup, this represents extremely high value.
