On a stormy afternoon, a customer came in and ordered a cup of Blue Mountain coffee. After brewing, I tasted a bit - that charming, fresh, and elegant subtle fragrance accompanied by cedar aroma, finally transforming into the sweet taste of chocolate. Coupled with the rainy weather, it was simply refreshing and satisfying, awakening the taste buds. I really love the sweet aftertaste of dark roast coffee beans. This sweetness is different from the sour-sweet sensation of light roast beans.
However, which is better: dark roast or light roast?
This question has been debated for over half a century. After all, tastes vary, and I love both, haha.
Many people often criticize dark roast beans as completely worthless, believing that the shiny, oily dark-roasted beans use carbonization to cover the taste of bad beans, such as rubbery, miscellaneous, rotten, and earthy flavors. However, some practitioners do indeed do this - unwilling to spend money on good beans, they use dark roast to eliminate the bad miscellaneous flavors of rotten beans. But we cannot therefore negate all practitioners, especially the few highly skilled small roasting companies who spare no expense to buy hard beans and painstakingly research the field of heavy roasting, who are truly worthy of our respect.
The sweet aroma of dark roast coffee and light roast coffee are clearly different. Dark roasted beans are deep and thick, with a heavy aftertaste and an overwhelming fragrant sweetness, mainly felt by the root of the tongue or the throat; while light roast coffee beans are light and bright, with an uplifting sweetness and low aftertaste, with sweet and sour aromas mainly presented on the tip of the tongue, both sides of the tongue, and in the nasal cavity.
Dark roast and light roast coffee have different heat levels, temperatures, roasting times, and heat curves, causing sugars to undergo different degrees of degradation, polymerization, and other complex chemical changes.
Coffee beans themselves are not bitter; the roasting method determines whether coffee is bitter or not. Chlorogenic acid lactone and phenylindane are the two heaviest bitter compounds in coffee. Both are degradation products of chlorogenic acid in raw coffee beans during the roasting process, and both are generated at different heat levels.
Chlorogenic acid lactone is generated during the light to medium roasting process before the second crack. Continuing to roast until after the second crack, chlorogenic acid lactone will further degrade into phenylindane, which has a heavier burnt bitterness, making it the bitterness-causing substance in dark roast espresso.
Really good dark roast coffee beans are rare and usually have a smoky flavor. Only by correctly controlling heat and time can the production of the bitter factor phenylindane be greatly reduced, making the oily beans mellow and soothing to the throat when fresh, without any burnt bitterness.
In the hot summer, a cup of light roast coffee can stimulate the taste buds and greatly increase appetite. On such a stormy day, why not have a cup of mellow dark roast coffee.
