Dark Roast Coffee Beans - Mandheling Coffee Flavor Characteristics

Mandheling coffee has a very rich flavor profile - aromatic, bitter, and full-bodied, with a hint of sweetness. Most coffee enthusiasts enjoy it as a single origin, but it's also an indispensable variety for blended coffee.

When Mandheling coffee beans are used for pour-over or cold brew, they don't produce any unpleasant acidity or astringency. After roasting, the beans are quite large with special aromas of nuts, pine, and caramel, offering a fragrant and rich mouthfeel.

Is Mandheling Always Not Acidic?

Factories can only choose medium-dark roasting based on brand positioning, unable to adjust for each individual's preference. Our roasters understand coffee beans and aim to suit most people's tastes while maximizing Mandheling's flavor characteristics. Specialty coffee has its unique characteristics, and our understanding of coffee is certainly different from other manufacturers, showcasing Mandheling's smoothness.

Testing

We tested light roast, medium-dark roast, and dark roast Mandheling. The testing method typically involves pour-over extraction for one serving, with grind size and water temperature slightly adjusted according to different roast levels.

1. Light roast: Fuji "Ghost Tooth" grinder at 3.5, water temperature 90°C, water-to-coffee ratio 1:15

2. Medium-dark roast: Fuji "Ghost Tooth" grinder at 4, water temperature 88°C, water-to-coffee ratio 1:15

3. Dark roast: Fuji "Ghost Tooth" grinder at 4.5, water temperature 86°C, water-to-coffee ratio 1:15

Test Results

1. Light roast: At this roast level, Mandheling has prominent fruity acidity with slight bitterness. The fruit acidity is obvious but very comfortable on the palate, creating a mouth-watering sensation on both sides of the mouth. Smoothness is average.

2. Medium-dark roast: Excellent balance, rich, aromatic, and full-bodied with more pronounced bitterness. Chocolate notes and subtle sweetness are more prominent, with obvious licorice aroma. Fruit acidity is weak, but smoothness is better than light roast, with intense aroma and noticeably improved fruit acidity.

3. Dark roast: Almost no acidity, with very heavy bitterness. If direct-fire roasting is slightly improper, it may produce burnt flavors.

Raw Beans: Lindong Mandheling

Lindong Mandheling G1, although Grade-1 quality, still exhibits the characteristic high defect rate of Indonesian beans, with about 8% defective beans. The beans have thick flesh, many defects, appear pale greenish-blue, and have high moisture content.

Roasting Review

1. Room temperature: 30°C

2. Initial heat: 50°C, bean entry temperature: 195°C, damper at 4

3. 1'50", temperature return point: 102.8°C, heat control at 130°C, damper closed to 3

4. 3'25", beans show light yellow color, roasted grain aroma appears

5. 4', roasting temperature 126.6°C

6. 5', beans fully wrinkled, roasting temperature 138.5°C, damper adjusted to 4

7. 6', roasting temperature 148.9°C

8. 7', roasting temperature 157.9°C

9. 8', roasting temperature 166.7°C, damper adjusted to 5

10. Around 9'55", first crack, roasting temperature 187.9°C

11. 14'30", beans discharged at 200.3°C, removed from roaster, roasting stopped

Roasting weight loss: 16.36%

Roast level: Medium-dark roast

Roaster parameters: Taiwan Feima Coffee Bean Roaster 801N/1kg semi-hot air/semi-direct fire coffee roaster

Suitable for pour-over or volcano-style extraction, works well with V60 or flannel filters.

Volcano-style Extraction

High temperature extraction, water temperature 90-92°C. Use small water flow in the beginning, approximately the size of a one-yuan coin position, then pause water, let it bloom, pause again, let it bloom again, keeping the grounds in a continuous blooming state. Bloom time 1:30, finally use large water flow for quick extraction. Total extraction time 2:30.
