Brazilian Coffee: The World's Largest Coffee Producer

I. IP Estate
The full name of IP Estate is Fazenda Isidro Pereira. It was first purchased in 1967 by Isidro Pereira, Luiz Paolo's father. By 1974, Luis began expanding Fazenda Isidro Pereira, which now covers 720 hectares.

This estate cultivates Yellow Catuai, Acaia (Acaia, mainly grown in Brazil, a variety resulting from natural hybridization of Sumatran Bourbon), and Yellow Bourbon. The estate is located outside the city of Carmo de Minas, situated at elevations ranging from 950-1200 meters. The high altitude facilitates slow maturation of cherries and allows for selective harvesting, which is a decisive factor in producing excellent quality coffee.
IP Estate has been producing premium coffee for 50 years. However, the estate owner Luiz Paulo Dias Pereira is not someone who rests on past achievements. He has a strong interest in continuous innovation for farm development. He recently invested in a fully washed coffee processing system. Although many specialty coffees worldwide already use this processing method, fully washed processing is still uncommon in Brazil. Implementing such systems and equipment is very expensive and requires exceptional skill and extraordinary patience to achieve. IP Estate has experienced and overcome all difficulties to bring us a unique and subtle flavor profile.

Sertão Estate belongs to the Sertão Group, and IP Estate is also one of the estates under the Sertão Group.
The estate is named after Jose Isidro Pereira, and his wife Nazareth Dias Pereira was a pioneer in coffee agriculture in the Carmo de Minas region. Furthermore, like other estates under the Sertão Group, IP Estate also produces the Yellow Bourbon variety, which is known for its very sweet and delicate quality. However, what makes the coffee we're using today different is that it's processed using the fully washed method.

② Six-cup Chemex: 30g coffee, 16:1 water-to-coffee ratio
Bloom time calculated from the start of water pouring, bloom amount 60g, start second pour to 360g at 30s (time point 48s), start third pour to 480g at 1min18s, cut off at 2min20s-25s.
