La Vega is a municipality in the Cauca Department of Colombia, with an average altitude of approximately 1,800 meters. The region has about 4,000 coffee farming households with an average area of less than one hectare each, totaling approximately 2,900 hectares.
Common varieties in this region include Castillo and Caturra, with the main harvest season typically occurring between April and June.
Unfortunately, coffee-growing areas are also ideal places for cultivating illegal drugs. Colombia is a region known for cocaine cultivation, so there are groups that do not want people to grow coffee.
This led to the creation of a new program - the Guardabosques (Forest Rangers) program. This program aims to prevent farmers in some areas from planting illegal crops such as coca and poppy. It helps with comprehensive development through economic, technical, environmental, and social support, and can also provide legitimate employment and income alternatives for communities affected by illegal crop cultivation.

Castillo inherits Caturra's short plant stature and high yield while also inheriting Timor's leaf rust resistance genes)

Brewing Guide
1. Cupping
Description: Floral notes, lemon, grapefruit, caramel, milk chocolate mouthfeel, slightly tea-like, with higher body.
2. Classic Pour-over (Hot):
30g coffee, 420g water, slightly shortened bloom, smoother second pour.
Description: Rich floral aroma, grapefruit-like acidity, caramel sweetness, smooth mouthfeel.
3. Kalita Wave (Iced):
30g coffee, Ditting setting 6, place 220g ice in cloud pitcher, brewing water 200g, first bloom with 60g water, second pour 140g in circular motion from center outward.
Description: Floral notes, gentle grapefruit acidity, caramel, higher body, milk chocolate mouthfeel, tea-like, long aftertaste.
4. Six-cup Chemex (Iced):
45g coffee, remove filter paper after wetting, cool filter bottom with small amount of ice, pour out cooling ice then add 380g ice, install filter paper, add coffee grounds, bloom with 90g water (counting from start of pour, 33s), second pour to 260g, wait 30s, third pour to 340g, total time 2min cutoff. Shake Chemex before serving.
Description: Floral notes, bright lemon and grapefruit acidity, smooth mouthfeel, slightly tea-like, lingering caramel sweetness.
