Origin and Growing Conditions
Ethiopian heirloom varieties grown in regions at altitudes of 1,750-2,000 meters, with fertile soil and suitable temperatures. Combined with proper rainfall, Sidamo exceeds expectations for natural process coffee beans. Natural process beans typically have good sweetness, but lack the clean brightness of washed beans. However, Candelaria coffee, beyond the inherent quality of the beans themselves, owes its excellence entirely to proper post-harvest processing, along with temperature and humidity-controlled warehouses and hygienic environments. Finally, appropriate roasting creates this exceptional coffee.
90+ Philosophy and Flavor Profile
90+ beans are named differently from specialty beans, starting from flavor concepts. "Candelaria" means "Best approach" locally, inheriting the charming aroma of traditional natural processing. It delivers a round, full, and rich fruit flavor that is extremely difficult to achieve in most natural process beans, which rarely have both clean and bright characteristics. Candelaria possesses the bright acidity of washed beans and the full body of natural process beans, with floral and fruit notes intertwining to create a complex mouthfeel.

Roaster's Notes
This batch of Candelaria comes from Ethiopia's Sidamo region, at an altitude of 1,750-2,000 meters. Its density and characteristic tropical fruit, honey peach sweetness are truly captivating. Sufficient heat and time were given during the evaporation phase, but no special treatment was applied during the Maillard phase. However, this slowed the flavor development reaction rate, bringing out delicate flavors.

- Brewing water temperature: 88-90°C
- Extraction time: Total extraction time 1 minute 55 seconds.
- Inject 30cc water, bloom for 25-30 seconds.
- Inject water to 240cc, stop water, let drip finish, remove filter cup to complete.
