Warm the Cup

Add Coffee Grounds
After warming the cup, place the ground coffee into the filter paper and remember to gently tap the cup walls to evenly distribute the coffee grounds, which will benefit subsequent water pouring. The grind size directly affects coffee flavor. If the grounds are too coarse, water will pass through quickly, resulting in incomplete extraction and insufficient aroma. If the grounds are too fine, it will impede water flow, causing over-extraction and making the coffee taste bitter. The optimal grind size for a coffee bean needs to be determined through continuous brewing experimentation. You can start with a grind size similar to granulated sugar.
Blooming
Add hot water around 93°C to wet the coffee grounds, allowing them to fully awaken and expand in volume. Stop pouring when water begins to drip through the filter paper. The water amount should be about twice the coffee grounds - for 15g of coffee grounds, add about 30ml of hot water. The expansion process releases carbon dioxide from the coffee grounds, and only grounds from freshly roasted coffee beans will produce this expansion effect. The more bubbles, the closer the roasting time. Otherwise, it will only leave a deep depression. When the bubbles start to contract, the blooming is complete, typically taking 30-60 seconds.
Water Pouring
Depending on different schools of thought, there are various approaches to water pouring. Some advocate completing the pouring in one go to achieve full extraction, while others prefer multiple pours to extract different flavors in the early, middle, and late stages. However, the constant is using a circular motion from inside to out for even water distribution. The water-to-coffee ratio should be approximately 13:1 to 15:1. It's important that during pouring, the water stream doesn't touch the filter paper walls while evenly wetting all coffee grounds during the circular motion. This is the most experience- and technique-testing aspect of pour-over coffee.
About Water Temperature
The optimal water temperature for pour-over coffee is closely related to the roast level of the coffee beans. If the temperature is too high, over-extraction will bring out more bitterness from the coffee beans, while if the temperature is too low, the taste will be too sour with insufficient aroma. Therefore, the optimal temperature requires continuous experimentation. Generally, light roast coffee beans need higher temperatures to stimulate aroma, with 93°C-97°C being suitable. Dark roast coffee beans require slightly lower water temperatures to prevent aroma from dissipating instantly, with 85°C-88°C being more appropriate.
