The Challenge of Choosing Pour-Over Coffee Beans
Many friends who are new to pour-over coffee may have had the same confusion as I did. With so many varieties to try, how should you brew the pour-over coffee beans you've acquired?
Understanding Coffee Bean Information
First, let's examine what brewing information the bean bag provides us. For example:
Roasting Date: The time when the beans come out of the roaster.
The Importance of Bean Degassing
Some people claim that coffee only needs 24 hours of degassing, with the third day being the peak flavor period, but this time is actually insufficient for proper degassing.
I would recommend customers choose coffee beans 4-7 days after roasting, which are also defined as fresh coffee beans.
Sometimes when buying beans at a coffee shop, you might hear the staff remind you that the beans were just roasted and suggest drinking them a few days later. This period is what's known as the degassing period. Freshly roasted coffee beans release carbon dioxide, creating atmospheric pressure in the bean bag. This pressure helps aromatic compounds fuse with oils, bringing the aromatic substances inside the coffee beans to a state where they can be easily extracted. The lighter the roast level, the less obvious the gas release and the longer the required degassing period. The darker the roast level, the faster the gas release and the shorter the degassing period.
For extremely light beans, a degassing period of 5-7 days is recommended. For medium-dark roast beans, a degassing period of 3-5 days is suggested. Everyone can adjust according to these recommendations. It's worth noting that the optimal flavor period for coffee is generally around 15 days, so it's better to drink the properly degassed beans as soon as possible.
Practical Brewing Examples
Let's look at some examples:
Yirgacheffe Pour-Over Coffee Beans
This Yirgacheffe is a light roast bean. How should you brew it on different days?
We can increase the brewing water temperature or adjust the grind size to be finer to increase the extraction rate.
Day 4 of Degassing: V60 dripper, 15g of coffee, water temperature 90°C, grind setting 3.5, water-to-coffee ratio close to 1:16.
35g of water for bloom, bloom time 35s.
Pour in stages: pour water to 110ml, then pause, then slowly pour to 230ml.
Day 15 of Degassing: V60 dripper, 15g of coffee, water temperature 87-88°C, grind setting 4, water-to-coffee ratio close to 1:15.
30g of water for bloom, bloom time 28-30s.
Pour in stages: pour water to 110ml, then pause, then slowly pour to 230ml.
Mandheling
This Mandheling is a medium-dark roast bean. How should you brew it on different days?
Day 3 of Degassing: KONO dripper, 15g of coffee, water temperature 88°C, grind setting 4 (Fuji R-440), water-to-coffee ratio close to 1:16.
30g of water for bloom, bloom time 30s.
Pour in stages: pour water to 150ml, then pause, then slowly pour to 230ml.
Day 15 of Degassing: KONO dripper, 15g of coffee, water temperature 85°C, grind setting 4.5 (Fuji R-440), water-to-coffee ratio close to 1:16.
30g of water for bloom, bloom time 25s.
After blooming, slowly pour all the water to 230ml in one go.
Brewing Recommendations
Recommendation: Dark roast coffee beans are suitable for water temperatures of 80-88°C, while medium-light roast coffee beans are suitable for water temperatures around 90°C. If coffee beans have missed their optimal flavor period and the flavor has significantly diminished, we can compensate by increasing the brewing water temperature, adjusting the grind to be finer, or increasing the amount of coffee grounds.
