Understanding Honey Processing
As previously mentioned, honey processing is a method that sits between natural and washed processing. It allows coffee to retain the cleanliness of washed processing while significantly increasing the sweetness and caramel flavors of the coffee (since the mucilage has extremely high sugar content) by sun-drying it together with the fruit mucilage. Honey processing first appeared in Costa Rica in Central America. Initially, it was mainly because some high-altitude areas in Central America lacked water resources, so coffee cherries were sun-dried together with the mucilage after using pulp removers.
Honey Process Classification
Honey processed coffee beans are classified into 3 grades based on the degree of pulp retention (from most to least): Yellow Honey, Red Honey, and Black Honey.
Yellow Honey (Honey Amarillo)
Yellow honey processed coffee beans receive the longest sun exposure time. Long sun exposure means higher heat, so this coffee can be dried within a week. Under normal circumstances, the drying time of coffee depends on local climate, temperature, and humidity conditions.
Red Honey (Honey Rojo)
The drying time for red honey processed coffee beans is 2-3 weeks, usually due to weather conditions or being placed in shaded areas. If the weather is sunny, growers will partially shade to reduce sun exposure time.
Black Honey (Honey Negro)
Black honey processed coffee beans are dried in shaded areas for the longest time with the shortest sun exposure, with a minimum drying time of 2 weeks. The processing of black honey coffee beans is the most complex (due to the extended drying time requiring more frequent checking to prevent mold and fermentation), has the highest labor costs, and therefore is the most expensive.
Flavor Characteristics
In terms of flavor, besides the increased sweetness mentioned above, yellow honey has a taste close to the bright and clean profile of washed processing, while black honey approaches the rich fruity aroma and full body of natural processing, with red honey falling in between. Of course, these are just general flavor descriptions - the degree of roasting, brewing methods, and different terroir conditions (microclimate) of different estates will still produce taste variations, waiting for everyone to explore and taste carefully~~
