Do you know where "Yirgacheffe" comes from?

Let's first look at the meaning of the ancient language.

'Yirga' means "settle down"

'Cheffe' means "wetland"

Therefore, "Yirgacheffe" means "Let's settle down in this wetland!"

Yirgacheffe

Located in the Sidamo province of Ethiopia, Africa, with excellent mountains and waters at an altitude of 5,000-6,000 feet.

Originally part of the Sidamo producing region, but because of its unique citrus and jasmine aromas, which are truly outstanding, farmers in the region proudly compete with each other, thus becoming an independent single producing region.

High-quality specialty coffee comes from coffee farmers' dedication to coffee cherries.

Farmers usually directly harvest from wild coffee forests (unique to Ethiopia) or plant them mixed with other crops in their backyards, belonging to typical garden coffee, which appears more natural compared to deliberately emphasized organic cultivation.

Different Yirgacheffe Coffee Beans

Several friends have asked, why do Yirgacheffe beans change so quickly?

Are different Yirgacheffe coffee beans really different?

What's the difference between washed and natural processing?

One friend really loves washed Yirgacheffe, whether it's [Hafursa] or [Biloya], she likes them both.

But she didn't dare to try [Guji Natural]. When she recommended a friend order a box of [Biloya], we included a bag of [Guji Natural] as a reference, but unexpectedly, her friend fell in love with [Guji Natural] from then on.

Same Yirgacheffe, yet thousands of differences!

Typical Yirgacheffe Flavor

The so-called typical Yirgacheffe flavor is "citrus-lemon acidity and jasmine fragrance," belonging to the floral-fruity aroma category.

Different Processing Methods Lead to Completely Different Flavors

[Washed Processing] is the most common processing method for Yirgacheffe.

It uses water to completely remove the coffee's peel, pulp, and defective beans.

Then the beans are dried, which can result in a clean and bright flavor.

[Natural Processing] involves drying the entire fruit directly.

Then machines are used to remove the peel and pulp. Since the drying process is mixed with pulp fermentation, it will have a wild wine-like flavor.

Which Processing Method Has a Higher Failure Rate?

Because the condition of the seeds cannot be seen during the natural processing process, it's easy to over-ferment, leading to rancid flavors.

Therefore, good natural beans are even more precious!

If good washed Yirgacheffe is fruit tea, then successful natural Yirgacheffe is fruit wine.

Do you prefer tea or wine? It depends on personal preference.

But don't worry, that little bit of alcohol has evaporated during the roasting process!

For Friends Who Love Yirgacheffe!

You also need to know which [cooperative] produced it!

Yirgacheffe is the highest altitude coffee producing region in Ethiopia, originally belonging to the Sidamo region.

Later, because the flavor was too special, it became independent from the Sidamo region.

Most common Yirgacheffe on the market belongs to

regional beans graded by the [Ethiopia Commodity Exchange],

which means mixing beans from farmers in the region.

Then grading and selling them according to appearance and size.

Another type is specialty beans produced by independent cooperatives.

Such products often have better flavor and more stable quality because cooperatives focus on their own brand management.

They can even meet fair trade and organic cultivation certifications.

Siphon Coffee Extraction (Yirgacheffe)

Yirgacheffe coffee beans 20g

Hot water 150g

None

Brief Introduction

Simple and easy way to brew a fragrant cup of coffee at home.

Cooking Steps

Place 20g of Yirgacheffe coffee powder in the siphon top chamber (do not connect the top and bottom chambers at this time).

Place 150g of hot water in the siphon bottom chamber and turn on high heat. Step 1

When the water in the siphon bottom chamber starts to bubble (indicating the water is about to boil), connect the top chamber. Step 2

About 1-2 seconds after connecting the siphon top chamber, the water from the bottom chamber will slowly be drawn up to the top chamber.

When the water from the bottom chamber is halfway drawn up to the top chamber, reduce the heat to low. Wait for all the boiling water from the bottom chamber to be completely drawn up to the top chamber, then use a stirring rod to gently stir in the same direction until the coffee powder is evenly distributed. Then move the heat source away from the center of the bottom chamber to ensure excessive gas boiling in the top chamber doesn't affect coffee quality. Step 4

After stirring, you'll find many bubbles covering the top layer of coffee in the top chamber. At this time, wait for a period of about 30-60 seconds (different times for different coffee beans). When the bubbles decrease and the coffee powder floats below the bubbles, and you notice many bubbles appearing in the coffee powder, turn off the heat and perform a second stirring until uniform. Step 5

Prepare a wet towel to wipe the outside of the bottom chamber to speed up cooling. When the coffee has completely descended to the bottom chamber, you can pour it into a pre-warmed cup to enjoy. Step 6
