The Rise of Decaf Coffee
Once upon a time, people who drank decaf coffee (coffee with low caffeine content) were always an unpopular group. Cafe owners found them troublesome, and those who prided themselves as true coffee aficionados considered them pretentious. They seemed to always sit at the loser's table in cafes. But nowadays, decaf coffee drinkers have also welcomed their spring. Some coffee roasters seem to have sensed the business opportunities contained in decaf coffee beans and have begun to devote themselves to seeking decaf coffee beans that don't compromise on variety and remain delicious. "Decaf coffee drinkers are the true coffee enthusiasts. Because they drink coffee not to stay awake, but because they love the taste of coffee."
Decaf Coffee Beans Gaining Favor
Tucker's interest in decaf coffee is not a whim. Like many of his customers, Tucker's doctor advised him to moderate his caffeine intake. In fact, decaf coffee is increasingly favored by people. According to the National Coffee Association, approximately 10% of the U.S. population drinks decaf coffee daily. But according to people in this industry, the consumption proportion of decaf coffee is often higher than regular coffee.
An informal survey targeting restaurants and cafes confirms this point. At Counterculture Cafe, decaf coffee revenue accounts for about 18% of total income. At a French restaurant called "Vase" in San Francisco, decaf coffee accounted for 33% of coffee sold. At a Starbucks store near New York's Grand Central Station, about a quarter of the coffee is decaf. And at "Cocoa Coffee Bar" in Brooklyn, New York, around 9 PM on Valentine's Day, the waiter said almost every cup of coffee ordered by customers was decaf. These numbers show that decaf coffee drinkers are no longer a controversial group, and their needs are becoming easier to meet.

Can Decaf Coffee Beans Be Eaten? Are They Delicious? How to Eat Them?
To make the experiment more representative, we purchased two types of decaf green beans for experimental comparison: washed Ethiopian G2 and washed Colombian, using corresponding grade green beans from the same producing regions as a control group. When discussing roasting methods, we realized that green beans after decaffeination need to be dried. The drying methods are nothing more than heating and rapid passage through high-temperature drying air currents. In fact, the air temperature during drying can reach up to 180°C, and the beans just finished with water treatment are soft and loose. So can we assume that the purchased Swiss Water Process decaf green beans already have a certain roasting foundation? For this reason, we decided to add an additional experimental group after conventional roasting, increasing the starting temperature and shortening the roasting process to simulate a second roasting process. Gradually exploring whether decaf coffee is actually [drinkable].
