Brazil Sitio Canaã

This Brazilian bean comes from Caconde, a city on the eastern border of São Paulo state, just south of Minas Gerais. The brothers João Hamilton and Ivan dos Santos of Sitio Canaã farm began collaborating in 2006 with Marcos Croce of Fazenda Ambiental Fortaleza (FAF) to produce the highest-quality Brazilian coffee while caring for the natural environment and the people around them. Sitio Canaã has since become one of Brazil's leading representatives of specialty coffee.

This is a Yellow Catuai batch, a coffee that has earned extremely high ratings this year.

FrontStreet Coffee Recommendation

Sitio Canaã is a fine introduction to Brazil's gentler side, and if you want a classic Brazilian single origin to compare it against, FrontStreet's Cerrado Red Bourbon is an excellent choice. Grown in the well-known Cerrado region and processed semi-washed, this red Bourbon takes a medium roast beautifully, opening with creamy peanut, toast, caramel, and hazelnut; the cup is round and smooth, low in acidity with a light bittersweet edge, and it works just as well in a pour-over, moka pot, espresso SOE, siphon, or French press.

For a sweeter, more fruit-driven expression, FrontStreet's Brazil Queen's Estate comes from Mogiana, near South Minas, where fertile red volcanic soil feeds the cherries. It is a rare Yellow Bourbon, a mutation of Red Bourbon, with a cleaner fruit character: with a pour-over, moka pot, or home espresso machine you can taste the sugarcane sweetness that sets this region apart, alongside fruit and chocolate notes. Brazil's mild acidity and balanced body are also why it anchors so many espresso blends, from FrontStreet's Classic Blend and Premium Blend to the Black Cocoa and Commercial blends, where it supplies chocolate and cream notes along with a soft sweet-sour-bitter balance that keeps extraction stable.
