Flavor Profile
Very sweet, smooth, and juicy. Honey, peach, caramel, and jasmine-like floral notes, with fresh cedar aroma. Delicate and bright acidity; very smooth, creamy mouthfeel with caramel sweetness.
Producer Story
This coffee is produced by the renowned Aguileras family of Costa Rica. The Aguileras have 12 siblings, all of whom started participating in coffee production following their parents. During harvest season, the brothers work at the mill with basically no hired help. With the assistance of the third generation, they work year-round at the processing plant, patios, pruning coffee fields, fertilizing, and other tasks. The Aguileras brothers place great emphasis on the quality of coffee farm and processing plant production.
Processing Method
This coffee is processed using the honey method, which means the outer skin is removed during washing, but some sticky mucilage is retained on the beans for drying, then removed mechanically along with the parchment. This coffee's deliciousness and bright acidity suggest that considerable pulp was removed before drying, although this impressive characteristic may also be related to the variety, as this batch is entirely of the Villa Sarchi variety.
