Farm History

Fazenda São Silvestre has been managed by the Andrade brothers since 1991. It is located in the Cerrado Mineiro region of northern Minas Gerais, bordering the state of Bahia.

Cultivation and Processing

The farm's volcanic soil provides ideal conditions for growing its main varieties: Yellow Icatú, Bourbon, and Typica. Coffee matures and is harvested using natural sun-drying processes: coffee cherries are washed and then left with their pulp intact during drying. Depending on climatic conditions, coffee can be completely sun-dried or completed in two stages - initially sun-drying the beans to reduce moisture content to about 20%, then finishing in mechanical dryers to remove excess moisture while maintaining 12% humidity.

After drying, coffee is stored in silos, protected by parchment or husk. Following maturation and before export, the coffee husks are removed and sorted. The farm has a BSCA-standard cupping laboratory where qualified cuppers conduct physical and sensory analysis.

Family Legacy

Fazenda Capim Branco in Paranaiba (Cerrado Mineiro) was the Andrade family's first farm; however, since the 1970s, the family has been very actively establishing new farms to expand their cultivation area, all aligned with their philosophy of producing the highest quality coffee. During this expansion period, the family acquired Fazenda São Silvestre.
