About Guji Coffee Bean - Anasora Coffee Estate

This coffee, Anasora, comes from a single private estate in Guji, established in 2013. The estate is located in Anasora village, Guji Zone, southeastern Oromia, with an altitude cultivation range of 1900-2350 meters. Superior geographical conditions, ideal growing environment, and slow sun-drying on African drying beds make this coffee exceptionally outstanding. The total area of the estate is 250 hectares, with current production area of 150 hectares, and production will increase by another 100 hectares in 2018.

There is a river called Turo in the estate where they established a washing station, so Anasora also has washed batches. Most people near the estate are Oromo people who speak the Oromo language. About 45% of people in Ethiopia speak Oromifa. Anasora Estate always helps nearby farmers, assisting them with coffee cultivation techniques. There is also a Yerba Buleye middle school in the area, and Anasora is working to establish a second middle school to help educate farmers' children. Anasora Estate also supports neighboring orphanages, providing higher-level education villages, hoping to give back to the local community and help them achieve better lives.

Mormora Farm is located in Ethiopia, Oromia Region, Guji Zone Province. The name Guji comes from the ethnic group here, which is the center of coffee-growing plateau geography and culture. This is a coffee with characteristics of Yirgacheffe and Sidamo. (Note: Coffee grown in southern Ethiopia in early days was generally called Sidamo, because the former administrative division was called Sidamo Zone. Later, due to the establishment of coffee grading auction system, Yirgacheffe gradually became the commercial name, and administrative divisions were separated: western Yirgacheffe town was classified in Southern Nations, Nationalities, and Peoples' Region, Gedeo Province, while eastern Oromia Region Guji Province is considered a newly developed coffee-producing area, just like Yirgacheffe was to Sidamo in its time)

Shakiso Mormora Farm started in 2012 as a family-style farm. The planting area is about 250 hectares, with altitude between approximately 2000-2300 meters. The coffee cultivation method is mixed planting with natural forests. (Note: Coffee cultivation requires shade, so farmers often plant crops like bananas in coffee-growing areas, but here it is directly planted in forests, which on one hand maintains ecological diversity, avoids damage to the natural environment caused by planting single coffee species, and on the other hand maintains nutrients naturally produced in the soil ecosystem. This is an organic cultivation method without using pesticides and artificial fertilizers. Avoiding single coffee varieties also helps combat natural disasters and various pests and diseases.) Ethiopia is a place of origin with numerous coffee varieties. Farmers collect and separate suitable varieties from forests for cultivation, and continue to plant them in natural environments. In addition to their own cultivation, Mormora Farm also purchases coffee from small farmers in nearby areas.

V60 Brewing Method:

1. Grind size: Fuji scale 3.5, approximately the size of granulated sugar.

2. Coffee-to-water ratio: 16:1, total water injection 225g, 15g coffee.

3. Brewing water temperature: 88~90 degrees Celsius.

4. Extraction time: Total time 1 minute 55 seconds. Inject 30cc, bloom for 30 seconds. Inject water to 225cc and stop, remove the filter cone at 1 minute 55 seconds to complete.
