The first time I tasted Ecuadorian Sidra coffee beans, I was captivated by the contradictory unity between its flavor richness and understated character. Almost all coffees have their unique flavors, but Ecuador's Sidra and Typica stand out for their distinctive lack of prominent personality, offering instead a grounded richness.

The Socialist Tradition in Flavor

For some reason, I immediately associated this with the socialist tradition of Latin American leftists; a realistic tendency that cares for socially vulnerable groups and human nature, such as the photography of Modotti and Salgado. Take Sidra as an example: its delicious and rich aspect belongs to the joy of the common people; but on the other hand, its subtle bitterness seems to reveal a trace of empathy for the suffering of the masses. This is a very clean, pure chocolate bitterness, almost without any impurities—like the compassion of the Virgin Mary. The first taste gives vitality and revolutionary drive; the latter presents a realistic social reality. These two flavors intertwine and change in dialectic, drawing out endless meaning. Even in the emptiness of the aftertaste, they continue their ripple-like undulations.

Sidra and Typica belong to the same lineage, but the former is romantic while the latter is classical. If Sidra possesses the realism of revolutionary action, then Typica is the philosophical thinking of revolution; if Sidra is Bai Juyi, then Typica is Du Fu. If the former represents the common people, the latter represents aristocracy and elite intellectuals; if the former is Modotti's photography, the latter is Salgado's work. Typica makes one sink into deep contemplation, its bitterness appears thick and reserved, while its delicious taste is more subtle and introverted. That contemplation sometimes enters the subtle realms of metaphysical thought, producing a deeper observation of the real world.
