J.J. BORJA NATHAN's Borja Estate primarily grows Bourbon variety Salvadoran coffee beans, with recent experimental cultivation of other varieties such as ABM or SAMPACHO. The plantation is distributed across the Apaneca town and the San Salvador Volcano region. Between these areas, there exists a diverse range of biological species and an excellent ecological environment. From the estate's large wooden house, one can gaze afar at the border between Guatemala and El Salvador, enjoying beautiful scenery. Inside the wooden house hangs an ancient bell with over 80 years of history.

Harvested red cherries are immediately transported to the BENEFICIO Agua Caliente processing facility, where clean natural spring water is used to carefully remove the fruit pulp and initiate fermentation processes. During processing, water quality is carefully monitored. After washing and fermentation completion, the processed beans are spread on ceramic bricks to dry naturally under the sun. If weather conditions are unfavorable, mechanical drying is used to reduce the beans' moisture content to between 11.5% and 12%. The beans are then stored in rice bags until hulling is performed prior to export. For each shipment batch, samples are kept as quality verification standards to ensure consistency.

Additionally, the estate owner places great importance on ecological environmental protection and personally manages all farming operations. From initial irrigation, fertilization, and root protection to final fruit harvesting, careful attention is given throughout the process to provide exceptional quality coffee beans. The removed fruit pulp is used as organic fertilizer, and annual soil composition analysis is conducted to understand soil changes and adjust fertilization ratios accordingly. Natural methods are also employed for pest control and disease management.

Estate History & Vision

The current owner of J.J. BORJA NATHAN Borja Estate represents the sixth and seventh generation. The present owner, Manuel Zepeda, is quite young and extremely confident in the coffee he grows. During our conversation with Manuel Zepeda, we learned that long ago, owls frequently visited the farm vicinity, which led to owl patterns being printed on the gunny sacks. However, as owl populations decreased, these patterns gradually fell out of use. Through our conversation, we requested that he restore the original appearance and revive the owl pattern, resulting in today's beautiful owl-patterned gunny sacks.

J.J. BORJA NATHAN Estate is moving toward its own brand BONA, pursuing higher levels of coffee excellence.
