How to Choose the Right Dripper for Golden Mandheling Coffee Characteristics_KONO Pour-Over Golden Mandheling

Since our customer base is quite broad, although light roast beans are currently mainstream, a small group of customers still appreciates medium-dark roasted Golden Mandheling coffee beans. Many customers in the shop have a special fondness for medium-dark roasted Golden Mandheling coffee beans. Through communication, regardless of roast level or acidity, it's mainly about that feeling of finding the right fit. In their daily lives, they're also very willing to try different coffees.
This type of customer has particularly high requirements for coffee mouthfeel - they need ultimate sweetness, high body, and a silky texture. For customers with these mouthfeel requirements, I usually prioritize recommending Golden Mandheling because this bean itself has no acidic characteristics, and the roasting time is relatively long.

We choose to drop the beans before the second crack, preserving a soft acidity. The coffee has high sweetness, rich aroma, and full body. Flavors include toasted bread, pine, caramel, cocoa, with a slight earthy note.
When brewing this type of medium-dark roasted bean, if it's close to the roasting date, I first choose the Hario V60 with spiral ribs because the V60's rib design can better help fresh beans degas compared to other pour-over drippers.
Medium-dark roasted beans generally have a higher dehydration rate, so they're lighter in weight. When brewing, the grounds don't completely sink to the bottom. When water is initially poured, it's immediately absorbed. Due to vigorous degassing, bubbles form around the grounds, creating channels. The fresher the beans, the longer these channels persist, causing the water level to drop quickly. I typically use a coarse water flow and circle slowly.
For daily brewing, I usually use the KONO 90th anniversary dripper because it can produce a more rounded and full-bodied taste, with more direct flavor expression. However, the KONO dripper has relatively poor degassing effectiveness because its ribs are straight and only extend to one-quarter of the dripper's depth. Above this quarter mark, the surface clings tightly to the wall, creating a sealed state.
Therefore, when the beans have passed their resting period, I choose the KONO dripper. Because this dripper's only degassing area is in that quarter with ribs, when the water level rises above the rib area, the water volume in the dripper continuously increases, creating pressure through the water's weight. Since the outlet is relatively small, it can extend the contact time between coffee particles and water. As the water flow carries the coffee, it can more effectively extract soluble substances, generally achieving the high body effect that customers expect.
