Personally, my favorite is Mandheling coffee, with its unique smoky flavor that is simply irresistible. By convention, any coffee produced in Sumatra is called Mandheling, but this classification is not entirely professional, though I won't go into detail here.
Sumatra is Indonesia's main specialty coffee-producing region, with a very complex coffee system that can be simplified into four main categories: Mandheling, Golden Mandheling, Lake Tawa Coffee, and Aged Mandheling, plus Java Old Brown. Mandheling features unique herbal and woody notes, Golden Mandheling offers bright body with excellent sweetness, while Aged Mandheling is sweet as honey. (Lake Tawa Coffee and Java Old Brown won't be detailed in this article.)
Golden Mandheling coffee beans, under strict Japanese management, undergo layer-by-layer screening to remove defective beans, finally presenting high-quality beans with dark green color and uniform appearance. The original herbal, earthy, and woody flavors of Mandheling are nearly gone, but the caramel flavor becomes more intense, and the fruit acidity tends toward brightness. Many people's first impression of Golden Mandheling is rich and mellow with strong bitterness but extremely weak fruit acidity. However, this is actually related to the fact that most Golden Mandheling on the market today uses medium-dark roasting.
But in reality, Golden Mandheling coffee beans in their raw state are extremely high in acidity. The characteristic transformation of its acidity lies in the fact that at light-medium, medium, and medium-dark roasting levels, the fruit acidity undergoes a change from quite prominent strong acidity to moderate acidity, then to weak acidity. If medium-dark Golden Mandheling is characterized by prominent bitterness, then light-medium roasted Golden Mandheling has fruit acidity reaching the peak level that I can tolerate. At this roasting level, Golden Mandheling is truly smooth in mouthfeel, with obvious but comfortable fruit acidity, creating a mouth-watering sensation on both sides of the mouth. Moreover, the masculine character of Golden Mandheling has completely vanished, and Golden Mandheling instantly transforms into a fresh and delicate profile!
Therefore, my conclusion is: if you are a friend who prefers rich, mellow coffee with weak acidity, choose medium-dark roasting without hesitation. But if you are a friend who can accept different levels of fruit acidity, then quickly try medium and light-medium roasted Golden Mandheling!
