When discussing New Guinea Bird of Paradise coffee beans, AA and PB grades must be described separately, as estate-grade AA selected beans fully express the paradise's climate, hydrology, geography, and the roaster's craftsmanship, while the "bird" characteristics are revealed in the PB small round beans. Bird of Paradise means "daytime dream" - arriving at paradise, one hears only birdsong, or perhaps sees the overlapping shadows of wings beneath soft tree leaves and gentle, water-like eyes.
AA is tranquil and serene while PB is lively and dynamic. It is said that the bird of paradise can fly 82 kilometers in one go without landing, demonstrating its exceptional flight capability. Bird of Paradise coffee follows a similar path: initially presenting floral and fruity notes with bright acidity, light yet warmly comforting, then as it cools, nutty tones emerge through the roasting method. When brought to room temperature, ester aromas finally appear - the bird has finally come to rest, having passed through flowers, grass, and trees, smoky and fragrant, fluttering and aromatic. A creamy-textured finish brings a knowing smile: ah, Bird of Paradise coffee. Thus the name is justified.

It is one of the least developed countries in the world, with dense rainforests, rugged mountains, and diverse indigenous peoples. Additionally, the country's biodiversity is astonishing, with approximately 6,500 native plant species and 380 native bird species, making it an important world biological treasure trove. Sigri Estate was established in 1950 in the Wahgi Valley of the Western Highlands, producing high-quality Arabica variety coffee with very strict quality control processes. Quality control begins right from harvesting: coffee beans are hand-picked and carefully inspected for defects, ensuring they are mature coffee cherries rich in balanced acidity and sweetness. Afterwards, they are processed using traditional methods with extensive water and complex procedures. Particularly during fermentation, the beans are continuously soaked and washed with large amounts of fresh water for three consecutive days. The biggest difference from other producing regions is that all coffee beans are completely immersed in water, thus creating a very special flavor. After the washing process, drying is not done by machine but entirely by sun-drying, making the coffee flavor even richer.
