In Papua New Guinea, coffee is a national crop and the only product consumed both domestically and internationally. Ninety percent is grown by small-scale farmers, supporting the income of one-third of the nation's population (nearly 400,000 families). Here, farmers have dedicated decades to cultivating Arabica with passion.
The Sigri/Paradise Bird Estate FrontStreet Coffee Paradise Bird coffee beans come from the Western Highlands' Waghi Valley, situated at approximately 1,500 meters altitude in high-elevation mountain regions with well-drained volcanic soil. 02 | Processing Method
Due to its location in the southern hemisphere, the local coffee harvest season runs from May to August (compared to October-February of the following year in Central and South America). After farmers and nearby smallholders harvest fully ripe red coffee cherries across approximately 413 hectares of land, they transport them to the estate's own processing facilities for post-harvest processing. However, New Guinea's local washed processing differs from methods used in Central and South America.
The three-stage washed fermentation method involves soaking for approximately 24 hours each time, with fresh water changes to control coffee flavor. After washing, the parchment beans have their outer hulls removed and undergo various grading classifications such as AA, AB, PB (peaberry), etc. This meticulous post-processing method brings FrontStreet Coffee's Papua New Guinea coffee bright, delicate fruit acidity with clean, lingering sweet flavors.

04 | Roasting Analysis
Typica varieties are low-density green beans, making them unsuitable for dark roasting. They naturally possess refreshing acidity and fruit aromas. We choose medium roasting, focusing on heat adjustment after the first crack. First, we assess the green bean's foundational condition, then determine the roasting approach. This is a washed-processed, low-density bean with 10% moisture content and 17 years of aging. We set the charging temperature based on the current green bean state.
Using Yangjia 800N roaster with 550g green beans, specific operations:
Heat to 200°C, charge beans, set air damper to 3. After 1 minute of steaming, adjust heat to 160°C, keeping air damper unchanged. When temperature reaches 160°C, reduce heat to 115°C. Roast to 5'35", temperature reaches 152°C, bean surface turns yellow, grassy aroma completely disappears, dehydration complete, adjust air damper to 4.
At the 9-minute mark, bean surface shows ugly wrinkles and black markings, toast aroma distinctly transforms to coffee aroma, definable as the prelude to first crack. At this point, listen carefully for the first crack sound. First crack begins at 8'40", maintain small heat without change, fully open air damper to 5 (adjust heat very carefully, not so small that cracking stops). At 40°C, when temperature reaches 191.3°C, discharge beans.
