Ethiopia's Diverse Coffee Cultivation

In Ethiopia, you can find various coffee cultivation methods: from vast wild coffee forests and semi-developed lands to traditionally managed small plots and modern plantations, everything is available. Approximately 50% of coffee is grown at altitudes above 1500 meters.

According to the four different production methods mentioned above, Ethiopia can be divided into nine major coffee-producing regions, including five specialty coffee areas: Sidamo, Yirgacheffe, Harar, Limu, and Lekempti, as well as four general commercial bean-producing areas: Djimah, Illubabor, Tepi, and Bebeka. Each region adopts either natural or washed processing methods, and different processing methods affect the flavor. Currently, natural processing accounts for about 80%, while washed processing accounts for about 20%.

Sometimes appearing in different estates, it also possesses various flavor characteristics. "Ninety Plus" refers to a series of 13 premium coffee varieties. These coffees come exclusively from Ninety Plus Coffee, American specialty coffee creators. They are all Ethiopian heirloom varieties, cultivated in ecological environments, processed under artistic standards, and optimized for flavor.

Artisanal Processing Excellence

The processing process is Ninety Plus's specialty. They separate these coffees by variety, microclimate, and harvest timing, tasting each one individually, designing specific processing methods for each flavor to achieve a particular flavor profile - like the designs of major brands, meticulously researched and crafted with heart to complete a work of art close to craftsmanship. Natural products undergo numerous refinements and improvements before finally presenting their most beautiful form to everyone.

Brand Restructuring

LEVEL UP will no longer operate as a sub-brand of Ninety Plus but will appear as one of Ninety Plus's product lines, canceling the original independent design.

New season products may cancel the original L grading system (originally L7, L12, L39, L139), while product and product line division will be based on more significant taste differences. The ancient natural processing method makes it difficult to obtain pure flavors, but Drima Zede, with 90+ technical support, only hand-selects the most mature coffee cherries. 25g of coffee grounds, 310g of water, medium grind, fine sugar, water temperature 90-91°C. Reduce heat, add coffee grounds and stir 3-5 times to fully moisten, stir gently again at 45 seconds for 5 seconds, turn off heat, stir once more while rotating.
