Burundi: The Mountain Kingdom of Coffee
Burundi is located in the south of the equator in east-central Africa. It borders Rwanda to the north, Tanzania to the east and south, and the Democratic Republic of Congo to the west, with the southwestern part bordering Lake Tanganyika. The country is predominantly composed of plateaus and mountains, mostly formed by the eastern plateau of the East African Rift Valley, with an average elevation of 1,600 meters nationwide, earning it the name "Mountain Kingdom." More than half of the country lies on the famous Lake Tanganyika. The capital is Bujumbura. The western lakeside and valleys, as well as the eastern regions, have a tropical savanna climate; the central and western parts have a tropical mountain climate. The average annual temperature is 20-24°C, with maximum temperatures reaching up to 33°C. March to May is the heavy rainy season, October to December is the light rainy season, and other months are dry seasons.
Burundi's Thriving Coffee Industry
Burundi has one of the world's most diverse and successful coffee industries, with its own unique characteristics. Burundi coffee beans were introduced by Belgian colonists in 1930 and are now only grown on small farms. Unfortunately, many of these farms are located in areas bordering war-torn Rwanda, which puts pressure on coffee production. Burundi produces almost exclusively Arabica coffee beans, while coffee trees in Ngozi are planted at elevations above 1,200 meters. Burundi coffee beans have a rich and aromatic flavor with excellent acidity, with most exports going to the United States, Germany, Finland, and Japan.

Burundi coffee beans share striking similarities with those of its neighboring country Rwanda, and the coffee produced by these two countries is often confused by people. Burundi coffee cultivation is dominated by Bourbon varieties, using traditional wet processing methods for coffee cherries. The main characteristics of its specialty coffee are elegant sweetness and bright citrus aromatics. This particular batch belongs to Bourbon variety micro-lots.

Extract with water temperature of 89-90°C, 1:15 ratio, medium-fine grind (Fuji 4)
Second pour to 140ml, wait for water level to drop before slowly pouring more water,
Maintain even speed, water level should not be too high,
Final pour to 225ml and stop, extraction time 2:15 seconds
