Roasting is the source of coffee flavor. The process of fire-roasting raw beans is called roasting. Raw beans cannot be consumed without roasting. Once coffee beans are roasted, they determine 80% of the coffee's taste. The roasting process is tricky - if the fire is too strong, the outside will be cooked while the inside remains raw; if the fire is too weak, the inside will be overcooked. The key is to control the heat properly to ensure the coffee beans are roasted evenly inside and out.

Characterized by Colombian hard bean qualities, the beans are large and uniform, full-bodied, and dense in texture. Few defective beans, with a greenish color and high moisture content.

- 5 minutes 20 seconds, roasting temperature 152°C, heat adjusted to 100
- 8 minutes, beans fully covered with wrinkles
- 9 minutes 45 seconds, roasting temperature 183°C, first crack begins, heat adjusted to 80
- 10 minutes 50 seconds, roasting temperature 186°C
- 12 minutes 10 seconds, first crack nearing end, heat unchanged
- 13 minutes 20 seconds, beans discharged, temperature 203°C, removed from roaster, roasting stops

Dry aroma is distinct with pleasant sweet fragrance. Coffee aroma is less obvious than dry aroma but relatively fresh, with faint floral notes detectable. Sugarcane flavor is quite prominent in taste, with little bitterness and relatively clean flavor. However, it lacks richness, with moderate overall body. Good aftertaste with noticeable sweetness and relatively long finish.
Overall, Colombia Santa Rita shows bright acidity but slightly lacks flavor complexity. Perhaps this is due to fresh roasting, as the beans are still in the degassing stage.
