Every time I mention coffee tasting to new friends, their first question is always: "Have you tried Kopi Luwak?" It seems as if apart from Kopi Luwak, there's no such thing as good coffee in the world. As a coffee enthusiast who frequently tastes different coffees, different regions, varieties, washed/natural/honey processing methods all give coffee beans different flavors. Coffee can have fruity, chocolate, earthy, smoky flavors... Each region, each type of coffee has its own origin and story. This time, let me introduce you to a coffee bean that suits popular tastes.

Rich and Robust Golden Mandheling Coffee

If you enjoy classic bittersweet flavors and rich mouthfeel, you can try the Golden Mandheling coffee from the Sumatra region of Indonesia. Mandheling coffee is a highland coffee grown at altitudes above 1,200 meters. Premium first-grade Golden Mandheling coffee has a relatively bold mouthfeel, with distinct charcoal aroma and earthy notes, mixed with dark chocolate and various spices such as cloves and pepper.

Under Dutch colonial rule in the 18th century, Arabica coffee was introduced to the lake area of Aceh Province in northern Sumatra for cultivation, gradually becoming the economic lifeline of the local area. Today, this region still dominates the country's coffee production. According to International Coffee Organization (ICO) statistics, Sumatra accounts for 74.2% of Indonesia's total coffee production.

Did you know that Mandheling coffee is neither a variety nor a growing region, but the name of an ethnic minority? Legend has it that during the Japanese occupation of Sumatra, a Japanese soldier drank a delicious cup of coffee and asked the shop owner where it was from. The shop owner misunderstood and thought he was asking about his ethnicity, so he replied: "Mandheling." Today, Mandheling coffee generally refers to Arabica coffee produced in northern Sumatra.

V60 Hand-Brew Golden Mandheling Coffee

Dripper: Hario V60

Water Temperature: 88°C

Grind Size: Small Fuji grinder setting 4

Brewing Method: Water-to-coffee ratio 1:15, 15g coffee grounds. First infusion with 25g water, let bloom for 25 seconds. Second infusion to 120g, then stop pouring. Wait until the water level in the coffee bed drops halfway, then continue pouring slowly until reaching 225g. Total extraction time around 2:00.

Analysis: Using a three-stage brewing method to clearly express the front, middle, and back-end flavors. Because the V60 has many ribs and drains quickly, stopping the pouring helps extend the extraction time, better extracting the nutty and chocolate flavors from the later stages.

Flavor: Multi-layered and complex, overall clean, relatively light mouthfeel, with a persistent caramel sweetness in the aftertaste, with a slight bitterness.
