FrontStreet Coffee previously published an article about making pour-over coffee with blend beans, but today we're going to do the opposite - creating SOE (Single Origin Espresso) using single-origin coffee. SOE stands for Single Origin Espresso, which means using single-origin coffee beans to extract espresso, allowing the regional characteristics of a specific bean to be highlighted. This time, we're using the Chaka batch from Geisha Village. The reason for choosing this bean is that it's natural processed, which gives it higher body compared to washed processing, along with higher oil content and a richer texture. Most importantly, we hope to extract the classic Geisha flavor - this is no small challenge.
Coffee Bean Information
Country & Region: Ethiopia
Estate: Geisha Village Estate
Altitude: 1900-2100 meters
Processing Method: Natural Process
Variety: Geisha Coffee Variety
SOE Espresso Extraction Parameters
Coffee Dose: 14g
Espresso Yield: 28g
Extraction Time: 33 seconds
Grind Size: Feima 900N #1.7
Espresso Flavor Description
Citrus, medium acidity, medium bitterness, slight green tea notes, subtle floral notes, thick and rich texture, medium-slightly short aftertaste
SOE Milk Coffee Parameters
Coffee Cup Capacity: 180ml
Espresso Yield: 28g
Coffee to Milk Ratio: 1:5.4
SOE Milk Coffee Flavor Description
Cream, chocolate ice cream, medium-high sweetness, milkshake-like texture, refined aroma
Conclusion
To make SOE espresso, the bean resting time may need to be extended. Additionally, the high-temperature, high-pressure extraction method makes it difficult to highlight the floral notes in the coffee, somewhat diminishing the characteristic qualities of Geisha coffee variety. However, this Geisha still makes for an exceptionally sweet milk coffee and is absolutely worth trying!
