Colombia Las Nubes Geisha Coffee Honey Process

In 2010, the Holguin family and Camilo Merizalde decided to establish a farm to cultivate the most unique experimental coffees. Camilo Merizalde, a renowned plantation owner in Colombia known for specialty coffee cultivation and experiments, besides his outstanding San Alberto Estate and Finca Inmaculate, began to cultivate and develop his latest estate based on his years of experience in estate management, variety selection, and cultivation, naming it Las Nubes (Cloud Estate). At the beginning of the estate's cultivation, Camilo chose several of the world's rarest coffee varieties such as Geisha and Laurina to plant in Las Nubes. In addition to these outstanding traditional varieties, Camilo also introduced the Sudan Rume variety (also known as RS-510) from the Boma Plateau valley in South Sudan.

In 2014, Australian barista Sasa Sestic began collaborating with Camilo and the exciting Sudan Rume variety at the estate.

Sasa fell in love with this rare wild Sudan hybrid growing in Colombian soil. Inspired by Australia's own wine industry, Sasa had an idea to enhance the fermentation acidity and flavor of Sudan Rume in Camilo's estate through anaerobic fermentation while providing stable temperature conditions, making it brighter and cleaner than washed processing.

The experimental project was a great success, and Sasa won the World Barista Championship title in 2015.

Sudan Rume, in its pedigree analysis, belongs to an earlier variety than the Typica and Bourbon lines. Since the Sudan Rume variety is mostly cultivated in Sudan and Ethiopia regions, its rich gene pool has continuously attracted scholars to study its disease-resistant genes over the years. However, due to its smaller yield compared to other varieties, it has not been widely popular in coffee-producing countries for many years. Compared to traditional common Geisha coffee flavors, Sudan Rume possesses rarer but rich typical toffee and milk candy flavors, while also exhibiting a thicker, more substantial body.

About Las Nubes

The farm is located in Colombia's coffee region: Cauca. Because it is at the highest point in this area, it benefits coffee plant growth and overlooks the beautiful city of Cali. These coffee trees are planted in areas with fertile red soil, and irrigation systems have been built in most parts of the farm, providing all necessary resources for coffee tree growth.

Las Nubes carefully selects Geisha coffee honey process batches, ensuring each coffee bean is picked when the fruit's sugar content has reached 18-22%, and uses African raised bed drying. During the initial drying period, coffee fruits are turned every four hours, accompanied by fan blowing, ensuring average and stable drying of the coffee fruits, thus guaranteeing their excellent and beautiful flavor.
