Introduction to El Halcon Estate - Costa Rica Coffee Flavor Characteristics

El Halcon Estate
El Halcon is one of several farms owned by the Navarro family, located in Tarrazu, Costa Rica's best coffee-growing region. The estate is situated at a very high altitude, approximately 1,900 meters above sea level. The owner is Enrique Navarro.
Coffee Varieties and Processing
El Halcon Estate cultivates Caturra and Catuai varieties. The freshly picked, sweet cherries are transported to the nearby Monte Copey processing plant, which is managed by his son, Enrique Jr. Monte Copey is a typical micro-mill that processes limited quantities each year, basically handling only coffee cherries from their own farms.
After the cherries arrive, they undergo mechanical washing to remove the pulp. The Penagos depulper is specially calibrated to leave more mucilage on the beans to enhance sweetness. After washing, the beans are dried on covered raised beds to slow down the drying process. Under Enrique's management, the processing plant experiments with various processing methods. In addition to washed processing, they are also skilled in natural and honey processing methods.
Brewing Recommendations
FrontStreet Coffee's pour-over brewing recommendations: We recommend using a V60 dripper, with a Fuji grinder setting of 3.5, water temperature of 90°C, and a coffee-to-water ratio of 1:15. Use 15 grams of coffee to brew 225 grams of water, with a total brewing time of 2 minutes.
