Yemeni Mocha Varieties
Common Yemeni Mocha varieties, such as Mattari and San'ani, are mainly named after their growing regions. Mattari's region is located in the Bany Matar area, while San'ani comes from the San'a region. However, Ismaili is exceptionally named after the coffee tree variety. What's most special is that not only are its trees the most traditional old coffee trees, but the method of harvesting the beans still follows the ancient practice of allowing wild coffee to naturally ripen, dry, and fall from the trees. During this process, the coffee beans not only absorb the coffee flavor under the exposure of the scorching sun, but their direct contact with the earth also preserves rich natural flavors.
