The Ruiz Family Estate: A Century of Coffee Excellence

The Ruiz family, with nearly a century of coffee expertise, has consistently cultivated the finest coffee in Panama. Today, the estate is jointly managed by Maria (the sister, who works in coffee) and Plinio Ruiz (the brother, who served as president of the Panama Association in 2014).

Impressive Scale and Advanced Processing

"Large" was my first impression of the Ruiz Estate, especially their massive coffee processing facility equipped with numerous advanced machines. Consequently, many renowned estates in Panama entrust the Ruiz Estate with their coffee's final processing stages.

Exceptional Terroir and Limited Production

From the estate's highest point, one can gaze upon the Caribbean Sea. Each afternoon, sea breezes create a subtle microclimate, while the fertile volcanic soil produces sweet, complex coffee cherries. This batch is a special offering from Sweetheart Manor, with only 400 pounds available. Grown at approximately 1,600 meters altitude and processed using exquisite natural methods.

Flavor Profile: Complex and Elegant

The ground coffee's dry aroma carries subtle notes of apricot and grape, with delicate lemongrass aromas emerging in the background. When hot water is added, various vanilla flavors burst forth, complemented by lemon peel aromas and refreshing acidity, reminiscent of a gentle breeze sweeping across grasslands, softly embracing the taste buds. The Bourbon variety is exceptionally distinctive—as the temperature slightly drops, oak flavors emerge that are undetectable in other varieties. Due to the high growing altitude, the coffee's inherent richness is by no means inferior, with subtle hints reminiscent of Geisha. Finally, a substantial caramel flavor provides a perfect conclusion. This approachable Panama coffee is something that sweet coffee enthusiasts should not miss!

Special notes: The Bourbon variety originated from Bourbon Island or Ethiopia, is susceptible to pests and diseases, and has lower yields. Some data indicates that Yellow Bourbon produces higher yields than Red and Orange Bourbon, but Red Bourbon remains the most common variety. Bourbon has close genetic relationships with SL28, Typica, and Cattura. Because it yields less in suitable environments, it often produces very high-quality cup profiles (evidence suggests that lower yields often lead to higher quality, as plants can more effectively absorb soil nutrients). Typical Bourbon cup characteristics include low body, balanced flavors, and distinct sweetness, making it an excellent base bean for espresso blends.
