Origin and Processing

Wanago is a small area located in the Gedeo region of southern Ethiopia. Gedeo is situated about 5 kilometers south of the Yirgacheffe town. Within the Gedeo jurisdiction, the most well-known areas are Yirgacheffe and Kochere.

The Oumer-Abedu Processing Station belongs to the Wanago cooperative, which is composed of over 700 local small-scale coffee farmers. Due to the numerous surrounding cooperatives, coffee batches produced in this small region have consistently shown surprisingly outstanding performance. Carefully selected fully ripe coffee cherries are processed with careful removal of defective beans during the raised-bed natural drying process to enhance flavor clarity and consistency, ensuring each production batch achieves optimal quality.

These small farmers' coffee cultivation areas average about 1 hectare, with planting altitudes between 1900-2100 meters. The coffee varieties are mainly local heirloom types. This small region receives an annual rainfall of 1900mm, with 3-4 months of dry season and 8-9 months of rainy season. After small farmers select and grade red cherry-colored coffee fruits, they are processed by the nearby Oumer-Abedu Processing Station, where they are placed directly on raised beds for natural sun drying. During the first few days of drying, the cherries are turned every 2-3 hours to prevent over-fermentation. After four to six weeks of natural drying, when humidity reaches 12% or below, the coffee is cupping-graded and auctioned by quantity through the Ethiopia Commodity Exchange (ECX). Typically, naturally processed beans are stored in parchment form until hulling is performed just before export.
