Introduction:
Ethiopia mainly has eight major producing regions: Ekempti, Limu, Illubabor, Djimma, Harrar, Teppi/Bebeka, Sidamo, and Yirgacheffe. Yirgacheffe is located in the Gedeo region of southern Ethiopia. This region governs the relatively famous areas of Yirgacheffe and Kochere.
Because the coffee produced in Yirgacheffe has a special flavor with a unique style that is widely loved, it stands alone in product classification and has always occupied a place in the global specialty coffee market. Yirgacheffe itself is a small town located in the Sidama province, with three neighboring small producing regions: Wenago, Kochere, and Gelena Abaya. Because the flavor of coffee produced there is almost identical to Yirgacheffe and runs parallel to it, Kochere is also classified into the Yirgacheffe region.
Ethiopia implemented a new trading and grading system in November 2009. Besides Yirgacheffe, three sub-regions were added: Wenago, Kochere, and Genlena Abaya, indicating that the flavors of these three regions are extremely delicate and can be further subdivided. Kochere is a small producing region located about 25 kilometers southeast of Yirgacheffe. The harvested coffee beans come from locally planted small-scale coffee farmers, assembled from numerous individual small coffee farmers. These small farmers' coffee cultivation areas average about 1 hectare, with planting altitudes of about 1800-2000 meters. The coffee varieties are mainly a mix of Typica and Heirloom. It is a region prosperous from coffee production and one of the three famous micro-regions of Yirgacheffe. The local population is about 100,000 people, with coffee beans as the main source of income.
Because this region has relatively advanced raw bean water processing equipment, it has always shown high standards in the field of washed processing. Kochere coffee beans that have undergone washed processing carry the clean sweetness of honey and citrus complex tones, which are widely praised. The main local production model involves small-scale coffee farmers directly delivering each harvest of red cherries to nearby cooperative washing stations for unified processing.
Starting in the 1970s, Ethiopia introduced washed processing technology. Currently, the raw bean processing in the Kochere region is mainly washed. After the washing station selects and grades red cherry-colored coffee fruits, they are directly de-pulped, washed, and fermented. After washing, the parchment beans are placed on racks for natural drying until the humidity reaches 12% or below, at which point they are directly sent to the Ethiopia Commodity Exchange (ECX) warehouse in Awassa. Cupping grading and quantity assessment are conducted. Typically, washed beans are stored in parchment form until the dehulling work is done before export.
The renowned coffee review Coffee Review gave Kochere washed beans a high score of 94 points. Since the implementation of the ECX system in 2008, most raw coffee beans have been sold through competitive bidding under this system. This batch of FrontStreet Coffee Ethiopia Yirgacheffe G1 raw beans comes from the Kore processing station in Kochere. This processing station is located in the Yirgacheffe region, in the small village of Kore between Fishegenet and Chelelektu, and is a washing station composed of about 700 small coffee farming families, mainly processing fruits harvested by nearby small coffee farmers.
The coffee fruits are local Heirloom varieties grown at an altitude of about 1800-2000m. They were rated G1, the highest grade, by the ECX. From the appearance, consistency, freshness to the dry aroma and flavor, they are quite excellent. The aroma is very rich, showing the regional characteristics of Yirgacheffe, emitting an elegant and captivating floral perfume-like fragrance. This batch of FrontStreet Coffee Yirgacheffe Kochere coffee beans brings forth floral notes, bright citrus acidity, lemon, berries, and honey sweet and sour aromas.
