The Harrar growing region is located in the Harrar mountains of eastern Ethiopia. By maintaining the most traditional natural processing method, the coffee beans develop rich, bold aromas and fruity acidity reminiscent of red wine. Freshly ground Harrar coffee reveals a robust jasmine fragrance, chocolate notes, and even complex spice undertones.
Harar, a famous variety from the birthplace of coffee—Ethiopia—is beloved not only for its red wine-like fermentation character but also for its chocolate-like aftertaste. The coffee is grown from Ethiopian heirloom varieties, cultivated using 100% organic methods.
Ancient Ethiopia primarily featured wild coffee forests, with no dedicated coffee estates for production, as coffee trees were abundant—simply requiring a walk into the forest to gather them. Harrar's processing still maintains ancient traditional methods—the most primitive natural processing. Local farmers harvest ripe red coffee cherries from trees, dry them in the sun to remove moisture, then crush the dried fruit to reveal the green coffee beans we need.
It is precisely during this natural drying process that the fruit aromas from coffee cherries concentrate within the beans, creating Harrar's rich and varied flavor profile.
The only drawback is that due to these primitive processing methods, there can be extreme quality variations between batches.
When first tasted, Harrar reveals a captivating fruit acidity similar to the sweet-tart profile of blueberries. This gradually transforms in the mouth into a red wine-like fermented character, concluding with a distinctly chocolate finish. The multi-layered flavor transformation of Harrar coffee beans is one of the reasons why countless coffee enthusiasts are captivated by them.
Perhaps because the processing methods maintain the most traditional techniques, Harrar coffee beans exhibit flavor variations from year to year—this year's might carry blueberry notes, while last year's had none at all.
