Ethiopia is currently the fastest-growing country in coffee production and development. Different regions not only create variations in coffee through different processing methods, but even the same processing method can produce different aromas and flavors due to different processing techniques, often creating illusions. For example, the natural process beans from Yirgacheffe and Sidamo have different aromas. The natural process beans from Yirgacheffe have higher moisture content, consist mostly of small beans, have relatively low and stable aromas, and a fuller mouthfeel. In contrast, the natural process beans from Sidamo have an intense, overflowing strawberry aroma that leaves a strong impression, but a thinner mouthfeel.

Harrar region is Ethiopia's most important natural process bean producing area. Since 2008, when Sidamo natural process beans emerged with many impressive small estates that attracted worldwide attention, Harrar natural process beans seemed to disappear from the coffee market, losing market focus compared to Harrar Mocha. However, Harrar natural process beans emit a low-profile yet fermented blueberry wine-like aroma and unpredictable, mysterious fragrances that, from time to time, make coffee enthusiasts nostalgic for their first love of natural process beans.

Harrar natural process green beans are long and rice-shaped, with uneven sizes, colors, and moisture content. Some beans have chipped edges and irregular shapes—this is the source of Harrar's intense, peculiar aroma and complex, ever-changing flavors.

The deep, rich, fermented blueberry aroma carries the tartness of red wine, with a particularly prominent roughness. The floral notes in the aftertaste are quite distinctive.

Harrar region is located in the Harrar mountains of eastern Ethiopia. By maintaining the most traditional natural processing method, the coffee beans retain a rich, unrestrained aroma reminiscent of red wine and a fruity acidic mouthfeel. Freshly ground coffee powder carries a solid, full jasmine flower fragrance, chocolate notes, and even a mix of various spices.
