Shelf Life and Freshness Are Two Different Things
Freshly roasted coffee beans begin to degas (primarily carbon dioxide), with the highest amount released in the first two to three days, continuing for about a week. Specialty Coffee Association Recommends Brewing 3-7 Days After Roasting
In 1999, the Specialty Coffee Association of America (SCAA) strictly adopted the definition of "freshly roasted coffee": regardless of packaging method, it must be brewed within 3 to 7 days after roasting, and must be brewed immediately after grinding. SCAA President Don Holly concluded on this matter: this is definitely not what mass-produced coffee merchants want to hear, because their distribution systems typically cannot deliver beans to consumers within a week.
Because fresh coffee beans slowly change during the process, after extensive testing, most people can still accept fresh beans within one month, and in winter, even after 45 days, they still taste good.
How Long Can Coffee Beans and Ground Coffee Be Stored?
It actually depends on your personal requirements for coffee quality. Given the variations in people's sensitivity to smell and taste, how many people can taste the difference between one week and two weeks, or two weeks and one month?
