What Are We Actually Talking About When We Say "Brewing Coffee"

When making coffee without a coffee machine, the recommended water temperature is around 90 degrees. Generally, it's simply a process of filtering water through coffee grounds to obtain coffee liquid. This doesn't have much to do with the word "brewing."

If we're talking about actual brewing, siphon pots and moka pots both place water on a heat source to "brew," then use steam pressure to assist in achieving the aforementioned process of "water filtering through coffee grounds." What's being brewed is the water, not the coffee directly.

Of course, there are also direct brewing methods, but these are generally ancient and crude approaches, only popular in some (coffee-producing) regions.

Is Unbrewed Coffee Healthy?

The coffee we drink is essentially drinking water that has dissolved caffeine, aromatic compounds, and nutrients from within the coffee. Therefore, as long as the water is fine, whether it's cold or hot water doesn't affect health.

Why is "brewed" coffee considered (relatively) less healthy? Simply put, because caffeine solubility increases with boiling, nutrients decompose into unpleasant and non-nutritious substances when boiled, and aromatic compounds volatilize when boiled.

That's just how it is.

Personal Experience with Eating Coffee Powder

Having just finished eating coffee powder directly, I'm filled with mixed emotions and came to search on Zhihu, unexpectedly finding kindred spirits. Let me answer this question. What I ate directly was the three-in-one type of instant coffee. My experience differs slightly from the previous respondents. Out of boredom and curiosity, I tried it and discovered that I felt like I was eating a mouthful of sand. My first reaction was that it was sweet - probably the taste of creamer. I don't like sweet foods, so this feeling was really cloying. Then came the bitterness... truly unforgettable... I think generally people shouldn't try this... it doesn't taste good...
