The Ardi Cooperative consists of 700 small-scale coffee farming family members. It was named "Ardi" after the 4.4-million-year-old female skeletal fossil discovered in 1992.

The processing method at Ardi is exceptionally meticulous. After mature cherries are hand-picked, they are dried on raised African beds for three weeks. Throughout this three-week drying period, workers turn the cherries every two hours. Daily manual stirring ensures uniform drying, guaranteeing that sun-dried coffee cherries of consistent ripeness achieve quality standards before becoming the final product.

Improved Natural Processing Method

Their improved natural processing method addresses two shortcomings of traditional methods: during harvesting, only fully ripe, deep red coffee cherries are selected. Before sun-drying, the beans undergo defect removal and screening at the processing plant to ensure uniform size and ripeness. Next, raised wooden frames or entire drying beds are used for sun-drying, eliminating the risk of beans absorbing unwanted flavors from the ground. During the drying process, careful attention ensures even moisture loss. Every three to five days, coffee workers manually remove any moldy or defective beans.

Therefore, by the time drying is complete and the beans enter the facility for pulp and fruit removal, what were once vibrant, deep red coffee cherries have transformed into excellent-grade, dark-hulled green coffee beans.

AeroPress: Recommended grinder setting 3.5, water temperature 90°C
