Himalaya Estate Introduction
Himalaya Estate is located in the Ataco region of western El Salvador at an altitude of 1,500 meters. The Mauricio family, which owns this estate, began growing coffee as early as 1875 and successfully won three Cup of Excellence awards in 2015, one of which was for the production from Himalaya Estate. Mauricio's full dedication to the coffee industry was influenced by his parents and grandparents, who were committed to growing specialty coffee beans in western El Salvador.
Pacamara Variety Characteristics
The Pacamara variety is a hybrid of the Typica variety Maragogype (elephant bean) and the Bourbon variety Pacas. The beans are large with full-bodied flavor, featuring bright stone fruit acidity and spicy notes.
Brewing Recommendations
FrontStreet Coffee suggests the following brewing parameters:
- Pour-over: V60 dripper, small Fuji R440 grind setting 3.5, water temperature around 90°C
- French Press: Recommended grind setting 4, water temperature 90°C
- Siphon: Recommended grind setting 4, water temperature between 90°C-91°C
- AeroPress: Recommended grind setting 3.5, water temperature 90°C
