Gesha Village maintains strict control from the seed selection stage. They sent coffee seeds collected from the Gori Gesha forest, 20 kilometers away from the Gesha Village estate, to professional institutions for genetic testing, confirming this as the original collection site of the Panama Geisha variety. Subsequently, through studying coffee tree morphology, bean appearance and size, and cupping results, they selected the Geisha variety most similar to today's Panama Geisha and began seedling cultivation. At the 2017 Japanese Barista Championship, Takayuki Ishitani used beans from Gesha Village to win the championship.
To highlight the characteristics and aroma of this bean, light roasting is used to best showcase Gesha Village's inherent qualities. Citrus aromas and intense tropical fruit sweetness, with citrus, tropical fruit, ripe fruit, berry notes, light fermented wine aroma in the sip. Honey process, also called Honey Process or Miel Process, involves removing the pulp while retaining the mucilage, then drying the beans with the parchment still attached.
Wet-hulled processing is common in Indonesia and differs from typical washed and natural methods: the wet-hulled method removes the parchment when the beans are still soft and moist, with moisture content as high as 30-35%, exposing the green beans directly to continue drying. This method was developed to adapt to Sumatra's humid climate to accelerate drying.
