In 2007, to help Ethiopian coffee farmers achieve better income and improve local living standards, a Dutch trading company called Trabocca launched the "OPERATION CHERRY RED PROJECT" with local farmers. This initiative aims to incentivize farmers to improve coffee bean quality. At the beginning of the harvest season, Trabocca designates microclimate zones for harvesting, with hand-picking of 100% mature red coffee cherries.
The coffee cherries, with their complete pulp and skin intact, are placed on raised beds for natural sun-drying. This labor-intensive raised-bed drying method prevents contact with the ground and avoids earthy off-flavors during the drying process, resulting in exceptionally clean fruit flavors. Key Techniques:
Gentle (Water flow should be gentle)
Gently pour water to reduce the impact on the coffee bed. Control the water level in the filter - after blooming, slowly pour from a lower height, allowing the coffee grounds to steep. This slows down the extraction rhythm, creating a coffee with softer mouthfeel and richer flavor.
Slow (Slow circular motion)
Slowly pour water from the center outward and then back to the center. Too fast circular motion increases agitation of the coffee, which can make medium-dark roasted beans taste more bitter. Minimize disturbance of the coffee bed and allow the coffee flavor to be extracted through immersion. This effectively controls bitterness and astringency.
1. Water-to-Coffee Ratio
1:15 to 1:17
For example, if your ratio is 1:16
Using 18g of coffee, the water should be 18 × 16 = 288ml
2. Blooming Time
First, rinse the filter paper, add coffee grounds, and level them
Then use an appropriate amount of water
(approximately 1:2 ratio, 36g water for 18g beans)

During the second water addition, pay attention to water volume - try not to exceed the height of the coffee bed. When the water stream approaches the filter paper, you can stop adding water.
