Hambella Woreda is located in the Guji zone. The rise of the Guji zone can be said to be one of the important development trends in Ethiopia in recent years. Shakisso is a well-known example, but the operational model of Hambella Woreda can be described as another unique case.

The rise of the Guji zone can be attributed to its inherent advantages, combined with Trabocca, the largest coffee bean merchant in the Netherlands, stepping into this region five years ago and collaborating with local coffee estates in production. They donated coffee cupping laboratories and strive annually to improve the quality and yield of coffee beans. Through their company's quality control, they gradually influenced the cultivation techniques of neighboring coffee farmers. Moreover, Trabocca company has long-term employees with over 10 years of experience in coffee cultivation, production, processing, and marketing in this region, which has helped enhance the coffee quality in this area. The center of Hambella Woreda is a village called Dimtu, which is also the most bustling place in Hambella Woreda. This batch from Dimtu Village, being a small-scale collection, certainly has better quality than large-scale collections, making it truly a premium raw bean from small-scale production in the Guji region.

Dimtu Village is the center of Hambella Woreda. Hambella borders Shakisso, also located in the southern part of the Oromia region, adjacent to Sidama and Gedeo. This area has many mine pits, which were originally used for gold mining, so there are many pits in this coffee cultivation area. This makes walking through the coffee cultivation areas full of danger. Like Shakisso style, Dimtu Village is a unique production area within Sidamo, even within Sidamo it's a remote region far from most coffee-producing areas. Another famous product from Shakisso is gold mines. Factors such as miners, land, and ethnicity also caused unrest in this region in 2006. Therefore, the biggest problem this region faces now is the need for manpower to maintain the cultivation areas and harvest coffee.

Local small farmers in this area started planting organic coffee in 2001 and work closely with medium-sized coffee producers because they are familiar with how to grow forest coffee in highland areas.

Dripper: Clever Dripper

The Clever Dripper combines the advantages of French press and pour-over methods. It's simple, convenient, and easy to use. It extracts through immersion, actually requiring little technique. If you find it difficult to master a stable water flow temporarily and can't accept the fine grounds of French press, then the Clever Dripper is an easy-to-operate choice that also balances flavor well. There's a piston at the bottom of the cup, which normally stays in a lowered position (with four legs underneath, keeping it suspended). When water is poured in, it closes under pressure, and the piston firmly blocks the water flow. When placed on a container, the piston below is pushed up, and the coffee flows out.

Preparation Work

1. Fold the filter paper, place it in the Clever Dripper, and wet it with hot water to remove the paper taste;

2. 15-16g of grounds, grind size BG 5R (Chinese standard #20 sieve, 64% pass rate), water temperature 90°C, water-to-coffee ratio 1:15;

Technique:

30g of water for blooming for 30 seconds, then pour with large water flow to 225g. Place on the serving carafe around 1:30 seconds, wait for the water to completely filter down. It takes about 20 seconds to filter, finishing around 2:05 seconds.

Flower Queen Coffee Flavor:

Balanced taste, nuts, almonds, pomelo peel, slight berry acidity. After cooling slightly, the berry acidity enhances, accompanied by fruit fermentation aroma. The aftertaste has sweet spices, overall clean.

The water-to-coffee ratio remains between 1:13-1:18. Water temperature and blooming time vary according to the beans. The grind size remains medium grind, similar to white sugar granules. Use filter paper specifically designed for Clever Dripper, with Melita filter paper being the first choice.

Flower Queen Coffee Flavor:

It has a distinct cantaloupe aroma, strawberry jam. The entry brings a soft acidity like jackfruit, with strawberry berry flavors emerging in the middle section, along with some sugarcane sweetness. The layers are quite rich. Aromas of green tea, strawberry, jasmine, lime, and sugarcane. The mouthfeel is light and clean, with soft and fresh acidity.
