Natural Processing Method
The natural process involves drying freshly harvested coffee cherries directly under the sun, preserving the fruit pulp and skin during sun-drying to maintain more flavor and sweetness in the raw beans. In Ethiopia's natural processing method, ripe red cherries and half-red cherries that sink to the bottom of the tank are selected and spread out in drying fields for natural drying. After approximately 2-4 weeks, when the coffee bean moisture content drops to 12%, hulling machines are used to remove the dried hard fruit pulp and parchment layer, extracting the coffee beans.
This method is convenient as it doesn't require the complex procedures associated with semi-natural or washed processing. However, the risks include potential mold contamination and the possibility of off-flavors, though the goal is to achieve rich, mellow sweetness.
