The Unique Charm of Mandheling Coffee
Today, FrontStreet Coffee wants to talk with you about Mandheling coffee. The local green bean processing method differs from other countries, and time has created its unique flavor characteristics. In fact, green beans are left to rest for a period in proper storage conditions, becoming "Aged Mandheling" that can be preserved for many years. Therefore, its green bean charm distinguishes it from other coffee-producing countries.
Wet-Hulled Processing Method
Sumatra's climate is humid, and the local Mandheling coffee beans are processed using a "wet-hulled processing method," which differs from the washed and natural methods.
First Stage
In the first stage, a wooden peeler removes the fruit skin and pulp, extracting the sticky parchment beans. Some may continue fermentation for flavor enhancement, while others are sun-dried for several hours until the parchment beans' moisture content drops to a semi-dry, semi-wet state of 30-50%.
Second Stage
In the second stage, a huller grinds away the seed coat, followed by continued drying for 2-4 days, until the moisture content reaches 12-13%.
FrontStreet Coffee Tip: Because the semi-hard, semi-soft moist green beans are easily bruised when the seed coat is removed, the beans crack open like goat hooves. This is not a defect bean—it's actually a very distinctive characteristic of Mandheling coffee.
Flavor Profile and Roasting
Mandheling green beans processed through wet-hulling have reduced fermentation time, resulting in lower acidity, increased body, and more prominent caramel and fruit aromas, with slight woody and herbal notes.
